Owner, Chef Marco's BIO

After a lifetime of fun cooking and eating with my Grandmother Gilda and my Mother Suzanne, I developed a passion for food and entertaining early on. Later, after working at many local Portland and Vancouver restaurants my culinary passion took me to Italy, where I immersed myself in the cuisine and culture. I entered “Apicius International School of Hospitality” in Florence and earned my Masters in Italian Culinary Arts. During this time I worked at several different restaurants in Florence and Cortona, Tuscany, and in Avola, Sicily where I learned classical and nuvo cuisine. I also spent a lot of time learning and cooking family dishes with my Aunt and cousins in Umbria, Calabria and Tuscany. All of these different styles of cooking and experiences deeply enriched my knowledge and love of the cuisine, culture and history of Italy. Upon returning home my mission was to share this with others, and in honor of my Grandmother Gilda who was my best friend and teacher I named the restaurant after her being forever in her debt.

Gilda's Italian Restaurant is real deal Italian food with local and seasonal ingredients.
